Summary
Five menu cards with the courses written in French. Translated: Clear Vegetable soup - served hot A whole poached Salmon Trout, highly decorated with prawns etc. Served cold with a Green Sauce. Saddle of Lamb - with mushrooms in a cream sauce. Poularde - 120 days old chicken, fattened with a rich diet. Roasted with mushrooms, duck livers in a cream sauce. Green salad Soufflé glace, a cold dessert made by combining an egg yolk custard or Italian meringue with strawberry purée and heavy cream before freezing. Decorated with fresh Strawberries. Small boat-shaped Indian-spiced pastries
